Originally from Spain, Paula moved to London 7 years ago. After becoming vegan, she quickly discovered a whole new world of flavours and exciting products, which led to her current obsession for food; that's how her dream of opening an all-vegan Supermarket started. Her dream was to encourage people to follow a kinder lifestyle by making veganism more accessible, specially for those transitioning.
She currently juggles her own Engineering business with fitness training, and working at the store & warehouse, while focusing on the development & expansion for GreenBay.
Paula is currently the biggest GreenTeam foodie and loves discovering new vegan products as well as visiting eateries around London and the world when time allows – which isn’t very often!
Co-Founder & Managing Director
Anderson is GreenBay’s co-founder and the voice of reason. With a background in finance and investment, and having worked for prestigious firms such as Bloomberg & J.P. Morgan, he decided to make a switch in his career to help promote veganism and live a more ethical lifestyle.
In 2013 he had the opportunity to watch a number of documentaries about animal farming which opened his eyes. This was sufficient to understand he had to make some changes to his personal life. He turned vegan in January 2014 and since then he has not looked back.
If you have visited our store, you can usually find Anderson bossing around or behind a spread sheet. You can also find him in the basement having a Lenny & Larry's cookie with coffee.
Social Media Manager
Val was our first addition to the GreenTeam, and joined us in September 2016 just a few weeks after we opened. She has been vegan for a couple of years now, and very quickly became very passionate about it. She describes herself as a very lively and happy person, but also shy sometimes, who enjoys meeting new people, eating out and supporting new and independent vegan eateries, as well as joining in activism whenever time allows.
You can find Val in the shop most afternoons, and you’ll find it hard to miss her… If her laughter doesn’t give her away, you will recognise her by her bright colourful hair, or somewhere in the shop petting the dogs that come to visit us.
Charlotte Mai Jacobsen
Gluten Free Specialist
Born in Denmark, Charlotte became vegetarian at the age of 18, highly influenced by friends who were also vegetarian and vegan, quickly discovered a whole new cuisine full of taste as well as acquiring a more diverse diet. After being diagnosed with dairy and gluten intolerance four years ago, she decided to make the switch to a vegan lifestyle. Charlotte feels that nowadays being vegan and gluten free is not as difficult as it was four years ago, especially in London, as a growing number of restaurants and supermarkets are aware of allergies and the rising number of vegans.
She believes that veganism is the only lifestyle that makes sense for her physical and mental health, but also for the environment and the animals. She believes that our high consumer behaviour and diets are responsible for the detriment of our planet, therefore she lives a very minimalistic lifestyle, owning very little clothes, and doing her best to buy clothes and products made from recycled materials. Charlotte also feels that going vegan and living an active fitness lifestyle is without a doubt the reason why she was able to say goodbye to years of mental and physical issues, and feels that with her knowledge, she’s able to guide people in the right direction if they’re interested in giving a go to a plant-based diet. Charlotte is also very keen on advising people about how to live with food allergies and intolerances. Vegan Food Specialist
Originally from Romania, Teodora is a recent Sociology graduate from Bristol who specialised in quantitative research, having done her dissertation on carnism as an ideology. With a passion for all things activism-related, she identifies as a liberal socialist, progressive intersectional vegan eco-feminist who cares about all social, environmental and human rights issues, which pretty much makes her the typical SJW that people on the internet love to make fun of.
When she isn't endorsing veganism to GreenBay customers, she's either at home making seitan or out dancing reggaeton.
